Speaking of easy, this meal is literally on the table in fifteen minutes. It is a low-carb meal because we do not serve potatoes or rice with it. I crumbled some goat cheese over this stir fry. If you really don't like it, you can just leave it out. You don't necessarily have to replace it with something else. The vegetable is quite crunchy and therefore not completely cooked to snot. This means you could also meal-prep it for the next day, for example. Especially if you have a busy work week and little time to make a healthy meal. You can also experiment with other ingredients, such as pieces of roasted pepper, olives or roasted nuts, to give the dish some variation and extra crunch.

For example, try adding some fresh herbs, such as parsley or chives, to add extra flavor. Keep it simple and let your own taste preferences guide you. Additionally, you can adapt the dish to the seasons by using seasonal vegetables. This not only makes it fresher, but also helps to save money. You need:

Ingredients:

  • 250 gram steak - ( 2 pieces)
  • 400 gram sugar snaps
  • 200 gram pumpkin - in cubes
  • 200 gram green asparagus
  • 10 green olives
  • 50 gram goat cheese
  • 120 gram Red pepper - 1 pieces
  • salt
  • peper
  • 1 el Persillade (spice mix)

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Clean the sugar snaps, remove the thread with a kitchen knife, cut off the woody side of the green asparagus and cut them into 3 pieces. Clean the bell pepper and cut into strips. (I bought the pumpkin ready-made in cubes).
  • Heat your wok and add a drizzle of olive oil. Add all the vegetables and stir-fry over medium heat for a minute at 10 until everything is al dente.
  • Season the steak with the persillade spice mix and fry it on high heat as desired.
  • Grab the bowls and divide the vegetables over the bowls, cut the steak into slices and divide over the vegetables. Sprinkle some sea salt over the meat.
  • Crumble the goat cheese over the bowls and finish with the olives.
  • Delicious bites!
