For the people who now think "aquafaba" what is that again? You've probably flushed this stuff down the sink quite a few times! And what a shame that is, because you can use it to make this delicious creamy chocolate mousse from Aquafaba. Aquafaba is a name for the liquid in which chickpeas or lentils are cooked. It is a good substitute for egg whites in many vegan and vegetarian recipes and is used to make foamy and fluffy products such as meringues, mayonnaise and marshmallows. So the next time you put your can of chickpeas in a colander, put a bowl underneath and collect this clear yellow liquid. Making the mousse is child's play and is so incredibly delicious. Is it a new idea? No, this has really been around for a long time, but I don't see it very often, that's why I'm bringing it to your attention once again.
Creamy chocolate mousse from Aquafaba
A little background and some tips about this stuff. So you can whip a very airy foam from this moisture. It may take a little longer than with egg whites. But just let your food processor do the work and let the magic happen!
As soon as heat gets to the foam, it collapses like a plum pudding. I poured the still fairly warm chocolate into the foam and then a soft mush was created that resembled chocolate sauce. Still quite airy though. I poured it into the bowls and put it in the fridge. There it became this wonderfully soft substance.
If you want a firmer result or if you want to bake macarons with it, for example, you have to work with starch and sugar. The temperature of your oven should not exceed 100 degrees.

Ingredients:
- 2 looks chickpeas - (a 400 gram can)
- 150 gram dark chocolate
- 3 el maple syrup
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Drain the chickpeas in a colander and collect the liquid in a bowl.
- Melt the chocolate in a bain-marie. Keep stirring until it cools slightly but is still liquid.
- In your food processor, beat the liquid to a firm foam. Note that this can take up to 10 minutes. That's why we melt the chocolate in the meantime.
- Add the maple syrup and chocolate to the foam and beat again on high speed. Then pour it into the bowls. I took out 4 well-filled bowls.
- Place in the fridge for at least two hours and let it set. Serve with some coconut flakes.
- Delicious bites!
