You keep looking for other vegetables and these green peas fell into oblivion a bit. But recently I took home two bags of fresh green peas and made this creamy green pea salad with clove cheese. Ingredients:
- 400 gr fresh peas
- 100 gr clove cheese in cubes
- ½ rode p
- 1 rode ui
- 1 green p
- 150 gr soybeans
- Fresh parsley, - finely chopped (to taste)
For the creamy dressing you will need:
- 3 el mayonnaise
- 3 el cottage cheese
- peper
- salt
- persillade spice mix

And this is how you make it:
- Boil the fresh peas in plenty of water with a pinch of salt for about 5-8 minutes until they are al dente (not too soft!). Are you using frozen peas? Boil them according to the instructions on the package, often only a few minutes. Drain and let cool well.
- Chop and cut all vegetables into very small cubes.
- Also cut the cheese into small cubes.
- Take a bowl and mix the dressing in it. Season with salt, pepper and the persillade mix.
- Place the cooled peas, chopped vegetables (red onion, peppers), soy beans and cheese cubes in a large salad bowl. Pour the dressing over it. Chop the parsley and add. Mix everything well. Cover the bowl and let the salad sit in the refrigerator for at least 30 minutes so that the flavors can be absorbed.
