A soup always goes in, right? I also really like to make it as an amuse-bouche or starter for the Christmas menu, for example. You can make the soup a day or two in advance. That does the taste a lot of good anyway to let it stand for a while. Roasted garlic instead of regular garlic will take the heat off. The garlic therefore tastes a bit sweeter and it is super soft. The popping is very simple and we do it in the oven. I am now posting this garlic soup recipe at Christmas time, but you can of course eat it all year round.

A soup recipe like this is quickly made. And as I wrote, prepare well in advance. If you have any left over, you can also freeze it for another day. This creamy garlic soup with prawns can easily be further flavored with various types of herbs.
Do you want it spicy? Then add some extra spice by adding a pinch of red pepper. Would you like to make it a little spicy? Then try a tablespoon of ras-el-hanout. - 2 bollen Garlic
- 250 ml cooking cream
- 250 ml vegetable stock - (may be from a block)
- 1 shallot - XNUMX onion - shredded
- 4 king prawns
- fresh chopped parsley - finely chopped
- freshly ground pepper
- ½ tl cayenne pepper

And this is how you make it:
- Preheat the oven to 180 degrees.
- Cut the top of the garlic bulbs with a sharp knife. Drizzle with 1 tbsp olive oil. Wrap the bulbs in aluminum foil and put them in the oven for 30-35 minutes until the cloves are soft.
- Finely chop the shallot and chop the parsley.
- Heat 1 tbsp olive oil in a frying pan and fry the prawns for 5 minutes over medium heat. Set aside until use. Season with some (cayenne) pepper.
- Remove the garlic from the oven and let it cool briefly. Squeeze the cloves from the bulbs and add to the stockpot. Add the chopped shallot and fry briefly with some olive oil until the shallot is translucent.
- Add 250 ml vegetable stock, bring to the boil and pour in the cream. With your hand blender you blend the soup into a nice smooth soup.
- Pour the soup into the glasses and garnish with the prawns and parsley.
