In January we are thrown to death with it, but here too some change is needed… December was a real festive month and unfortunately the jeans also noticed that. And this is how you make the Roast beef salad with soft egg:

-If you have all the ingredients at home, make sure to make a fresh pesto. If you want to know how to do that, take a look here.

-Take the plates and first divide the roast beef on the plates. I put the slices a bit in a flower shape, but you can of course also lay it loose on the plate.

- Boil your egg in a saucepan, in the photo I have put half an egg per plate, but you can safely count 1 egg pp.

-Drop the pesto on the roast beef and dress it further with the beetroot, carrot, tomatoes and arugula.

- Finally, you grate some nice fresh Pecorino on the salad and it is still delicious despite it being a light meal!

Ingredients:

  • 1 ei - soft boiled
  • sweet/sour beets
  • Sun dried tomatoes
  • rocket salad
  • root - julienne cut
  • fresh pesto
  • pecorino cheese - cheese
