The chicken actually plays the leading role in this roti chicken with flatbread, next to the sweet and sour cucumber. I remember well that I moved to Rotterdam and next to my work there was a Surinamese toko / sandwich shop. Well, I could often be found there to get a chicken sandwich with extra sweet and sour cucumber! Making these cucumbers is really mega simple and you can store them well in the refrigerator. We season the chicken with the roti spice mix from my regular supplier. It is a salt-free herb mix, so you can add it or not to your own taste.

If you feel like it and have the time, you can also make the flatbread yourself. I have two recipes for that, the "difficult"“where the dough really has to rise, and the simple version where we work with self-raising flour. Something for every chef. The roll is also easy to take to work. Just put it in a Tupperware box and then enjoy it at work! For those who worry about the fat on the chicken thigh: it melts off during grilling! It does give your chicken a lot more flavor. Chicken fillet is fine, but will dry out faster.

For the sweet and sour cucumber:

  • 1 cucumber
  • 5 balls pimento
  • 1 el sugar
  • 100 ml vinegar
  • 1 tl salt
  • 2 toes Garlic - into slices.

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Season the chicken thighs with the spice mix and possibly some salt.
  • Boil the eggs.
  • Cut the cucumber into diagonal slices and place in a saucepan with the garlic and spices, salt, sugar and vinegar. Put the heat on the lowest setting and let it warm up slowly. The cucumber will become soft.
  • Mix the mayonnaise with the sambal.
  • Grill the chicken thigh on your grill and cut into slices.
  • Spread the flatbread with the mayo mix and top with the chicken, cucumber, iceberg lettuce and egg.
  • Delicious bites!
