Sometimes you have an idea in your head but no idea whether that translates into a tasty dish on your plate. I was in the mood for pizza but not a thick base or to make the base myself at all. Yes, sometimes I don't feel like cooking extensively. So I made it easy on myself and bought a ready-made roti from Faja Lobi. Now there could have been a completely different brand here, but my eye fell on this one by chance. And very secretly they are the most well-known Surinamese brand in the supermarket. As far as this unpaid advertising haha. I had a duck breast in the fridge and had to use it. And so I thought it might be nice to cut it wafer-thin and put it on the roti. Get started with this duck breast roti pizza.
And this is how you make the Roti pizza with duck breast:
-Let's bake the duck breast first. Take the breast and cut a diamond pattern in the skin with a very sharp knife. Heat a frying pan and then fry the breast skin side down in the pan. When the fat starts to melt, turn it over and fry it on the other side for a few minutes. It should definitely not be baked through and through. About two to three minutes on each side. Then fold it in aluminum foil to rest. When it has cooled, cut it into very thin slices.
-Steam or boil the bimis sticks until al dente and set them aside until use.
Cut the onion into half rings and put a little oil in a clean frying pan. Gently fry the onion in it until translucent. Then add the sugar and balsamic vinegar and let it simmer over low heat until the onion rings have completely softened.

-Preheat your oven to 200 degrees. Place the rotis on a grid and cover them with the capers, bimi, onions and slices of duck breast. Then put in the oven for 3 minutes.
- Beat all the ingredients for the sauce into a delicious garlic sauce.
