Eating salads for lunch in winter is always a bit difficult for me. Because it's still cold straight from the fridge. Funny that we eat that kind of thing quite seasonally. But it's February, the belt could be tightened a few notches again, so looking for the right middle ground. And that is possible with this salad with salmon from the oven. And this is how you make the salad with salmon from the oven:

First, take a nice oven dish and pour a generous dash of olive oil into it. Place the salmon fillets skin side up in the dish; this not only gives a nice presentation, but also keeps the fish juicy. Then sprinkle generously with freshly ground pepper and sea salt, and add a handful of almond flakes for that extra crunch effect. The almonds give the salmon a delicious, nutty flavour that goes perfectly with the richness of the fish. Now put the dish in a preheated oven at 20 degrees for about 180 minutes. This will cook the salmon wonderfully, making the meat tender and full of flavour. Enjoy an easy, healthy and delicious dish!

Almond shavings are finely grated almonds that are often used as a topping for pastries, ice cream, desserts or other sweet treats. It is also a popular addition to granola, muesli or other breakfast cereals. It gives a crunchy texture and a sweet, nutty flavor to the dishes in which it is used.

While the salmon is cooking in the oven, we grab a nice plate and start preparing our salad. Lay a bed of fresh lettuce and add the colorful vegetables; think of crunchy cucumber, radishes and sweet tomatoes. Gently toss everything together, so that all the flavors can mix well and the colors come into their own. In the meantime, we make the dressing in a separate bowl.

You need:

Ingredients:

  • 1 break fresh salmon
  • 1 bag mixed salad
  • 1 bag julienned carrots
  • slivered almonds
  • salt
  • peper
  • olive oil

For the dressing you will need:

  • 1 tl honey mustard from Maille
  • 1 el olive oil
  • 2 el White wine vinegar

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • First take a baking dish and put a little olive oil in it. Then place the salmon skin side up in the dish. Sprinkle some freshly ground pepper and salt on top and a handful of slivered almonds. Place in a preheated oven at 20 degrees for 180 minutes.
  • While the salmon is baking, we grab a plate. Add the lettuce and the rest of the vegetables. Mix it all up a bit.
  • In a separate bowl, combine all the ingredients for the dressing. With a whisk you beat the whole into a nice vinaigrette. Drizzle this on top of the lettuce.
  • Finally, when the salmon is ready, remove it from the oven and scoop it onto the salad with a spatula.
