This is how you make the Salade Nicoise a la Francine:

-We start by cutting the stem of the artichoke and removing the hard outer leaves. These are not tasty and must therefore be removed. Then grease the bottom of the artichoke with half a lemon so that it does not brown during cooking. Take a large pan and add water and the juice of 1 squeezed lemon and submerge the artichokes in it until they are submerged. You can put a plate on top so they don't float to the top, then let them cook for 30 minutes until they are cooked through.

- Then whisk all the ingredients you need for the dressing into a fresh dressing and set it aside.

-Let the tuna drain, and boil the eggs, they can be hard boiled, but if you prefer softer, that's okay too. Meanwhile, cook the haricots verts for 4 minutes.

- Cut the rest of the ingredients and set them aside to finish your plate later.

Once the artichokes are cooked, drain them briefly. Note that you do not eat the hairs/hay in the artichoke, but you can eat the heart and leaves.

You need:

  • 2 red tomatoes
