Ingredients:

  • 2 eggs
  • fresh chopped parsley
  • 3 sweet potatoes
  • 100 gram sausage - cut in pieces

For the paprika sauce you will need:

  • 2 red peppers
  • 1 yellow bell pepper
  • 1 can of mashed tomatoes
  • 1 jar of grilled peppers
  • 2 cloves of garlic
  • 1 big onion
  • chili powder
  • peper
  • salt

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • First we make the sauce, remove the seeds from the fresh peppers and chop them into cubes. Chop the onion, remove the skin from the garlic cloves, and drain the peppers from the pot.
  • Heat a frying pan and add some olive oil, fry the onion, garlic and peppers until softened, then add the can of tomato sauce. Season with salt, pepper and some chili powder. Let it simmer for fifteen minutes. Then blend into a sauce with your immersion blender.
  • Peel the sweet potatoes and chop them into small cubes. Boil them for 10 minutes in water with a little salt. Drain and place in the baking dish.
  • Spoon the sauce into the baking dish and also add the chorizo ​​that you have cut into cubes.
  • Preheat your oven to 200 degrees.
  • Make two holes with a spoon in which you carefully slide the eggs. Place the baking dish in the oven for 15 minutes until the egg is nicely set.
  • Sprinkle with the chopped fresh parsley.
