Now I have to tell you that I prepared this paprika sous-vide. Not everyone will be able to do this at home. In that case, cut the bell pepper into pieces and fry them with the onion until they are nice and soft.

So I got to work with my sousvide stick. I cut the bell pepper into strips and added them together with some pepper, salt, basil, fresh thyme, fresh rosemary and some cloves of garlic in the vacuum bag. These went underwater at 83 degrees for over an hour and a half. After that they were super soft and well flavored. Then cut them into small pieces and add them to the pan when you have cooked the chorizo.

Chop the onion and garlic cloves and bring to a high temperature in a wok. Pour in a dash of olive oil and fry the black garlic for a minute. Then add the chopped onion. (If you do not have a sous-vide prepared bell pepper, add the chopped bell pepper pieces now). The chorizo ​​cut into cubes can also be added to the pan. You will notice that the chorizo ​​releases its fat into the pan and this gives everything a good taste. Bake this for about 10 minutes. In that time we will make the rice.

Making saffron rice

Saffron has a very typical taste, you recognize it right away. Because it also has a fairly strong taste, I didn't add too many threads. Just enough so that the rice has turned a bit of a light yellow color. I used about 250 grams of uncooked rice. Fill the pan with water and add the saffron threads to the pan and bring to the boil. You will see that the water colors! Add the rice and cook according to package directions (9-11 minutes).
