Making granola healthy is a very easy job. Once every two to three weeks I make a “batch” and then I can have a nice breakfast again. The big advantage of making it yourself is that you also decide what you put in it. Now that we are approaching the holidays again, I wanted to make a tasty Sinterklaas version. We are overloaded with speculoos and chocolate letters, there will probably be some left over to process in your granola. This granola recipe is therefore a bit sweeter than a standard nut-oatmeal recipe. But he is also very nice! So take a look at what you have in your cupboards for Sinterklaas candy and get started with this speculaas granola with chocolate.

You can use any kind of chocolate for this granola recipe. It's just what you like. In this recipe I opted for a pure letter with hazelnuts. We also use walnuts, these really suit me this season. I ordered many of these products from KoRo, an online wholesaler that sells everything in bulk. This way you have a lot in stock and you can easily make your own granola mix, such as with this speculaas granola with chocolate. You could also replace the speculaas chunk with, for example, kruidnoten or small speculaas.

A fantastic combination that is certainly well appreciated here at home!

Ingredients:

  • 75 ml olive oil
  • 1 protein
  • 2 el maple syrup
  • 1 big chunk of gingerbread
  • 1 chocolate letter
  • 3 el chia seeds
  • 1 el cookie spice mix
  • 100 gram oatmeal flakes
  • 100 gram walnuts
  • 6 el puffed quinoa
  • 3 el sesame seeds
  • 6 el linseed

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat your oven to 170 degrees and place a sheet of baking paper on a baking tray.
  • Finely chop the chocolate letter and gingerbread chunk.
  • Take a bowl and put all the nuts, seeds, speculaas and other dry ingredients in it. Mix well.
  • Mix the egg whites, syrup, and olive oil in a bowl and mix into the bowl with all the dry ingredients. Spoon onto the baking tray and bake until golden brown, about 18 minutes. Just keep an eye on it, not every oven is created equal!
  • Allow to cool completely after baking and then add the chocolate. Then scoop it into the glass jars or Tupperware container.
  • Delicious bites!
