There is quite a story behind this photo and this oatmeal cookie recipe. Of course I would like to share that with you and with this you get a nice insight into the world of food bloggers. Photography is very important and over the years my photos get better and better. But sometimes I can get some help with it. This is how I went to Rotterdam to visit Marianne van CookingMar a day to shoot together. She takes really nice "moody" photos and is a good photographer. Later I realized that it would be a shame not to actually have a recipe for it. And that's how I got started with this delicious sweet spelled flour oatmeal chocolate cookies. Since I'm not really a big baker myself, I found a nice recipe on the site of Pauline's kitchen. I modified this a bit with ingredients from my pantry.

Testing and trying recipes is great fun, sometimes it works and sometimes it doesn't. I don't take much risk with baking, so I've adjusted some things to the original oatmeal cookie recipe, but no essential ingredients. You can easily and quickly bake these oatmeal cookies because they are ready within half an hour. That's without the cool down time, don't burn your tongue on these delicious sweet spelled flour oatmeal chocolate cookies when they just come out of the oven. Why the spelled flour?

I still had that at home and the bag was open, a shame not to use it and it gives an extra satiating feeling. They are big boys, nice and thick and a little soft. So don't expect a cracking cookie like a speculaasje for example.

- 270 gram oatmeal
- 225 gram spelled flour
- 125 gram white caster sugar
- 25 gram coconut blossom sugar
- 90 gram honey
- 125 gram butter
- 1 teaspoon baking soda
- 2 tablespoons boiling water
- 60 gram dark chocolate
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat the oven to 160 degrees.
- Chop the chocolate chunks into small pieces.
- In a bowl, mix the oats, sugars, and spelled flour.
- Take a pan and put the butter and honey in it, melt the butter while stirring. When that is done, add the baking soda and the two tablespoons of boiling water. Note that the whole will foam a lot, a reaction of the soda. Stir well and then pour into the bowl.
- Add the chocolate and mix well until a kind of dough forms and then make 16 equal balls.
- Line a baking tray with baking paper and place the balls fairly far apart on it and crush them a bit. (I needed two tins for this amount). The cakes expand during baking and are therefore a lot bigger than the balls.
- Bake the cakes for about 15 minutes until golden brown. Remove from the oven and let cool for a while, then place them on a rack and let them set a little more.
- Delicious bites!
