A quesadilla is a typical Mexican recipe, yet this time we make it with a kind of Mediterranean touch. We choose French Gruyère cheese and Provencal herbs. There is actually a package of tortilla wraps in my pantry as standard. Handy when you are hungry or for a quick lunch. Open your vegetable drawer and fill the wraps with whatever vegetables you find in there. In this case it was mushrooms and spinach. And cheese…lots of cheese! Of course you can also make this quesadilla the Mexican way. Then use cheddar cheese and season everything with Mexican herbs. For some spice, add a small chopped red pepper or chili flakes up. You can also opt for whole wheat tortillas. Perhaps just a little more fiber than the usual. Furthermore, it is simply delicious to enjoy these melted cheese snacks! Pieces of bell pepper or finely chopped olives can also be served between this spinach quesadilla with Gruyère.

Ingredients:

  • 2 Tortilla wraps
  • 200 gram spinach
  • 1 ui - XNUMX onion - shredded
  • 5 big champignons - cut into slices
  • 1 teen Garlic - XNUMX onion - shredded
  • 150 gram gruyere cheese grated
  • 1 el olive oil
  • ½ el Provencal spice mix

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Chop the onion and garlic. Cut the mushrooms into slices.
  • Grab your frying pan and add some olive oil. Fry the mushrooms until no more moisture comes out, add the onion and garlic and fry for a while. Then add the spinach and let it wilt. Put everything on a plate.
  • Place 1 tortilla in the pan and put half of the cheese on it, spoon the vegetable mix on top and sprinkle the Provencal herbs on top. Then again the rest of the cheese and cover with the other tortilla.
  • After a couple of minutes, carefully but quickly turn the whole tortilla over with the spatula and fry the other side. (You can also do this by placing a plate on top of the tortilla, flip the pan and then flip the tortilla back into the pan).
  • Remove the tortilla from the pan and cut it into quarters, two quarters pp should be enough for lunch.
  • Delicious bites!
Tip: Brush mushrooms clean and do not cut too thinly for extra bite.
Serve with a fresh tomato salsa or spicy yoghurt dip.
