Do you really have to write out this recipe? I think there are hundreds out there. Well, mine is really mine. And maybe you make it just a little differently, and you think, hey, this sounds good too. If you ask the average Dutch person, I think he was served endive stew with bacon at an early age in his youth. People always laugh a bit about “mashing” your potatoes, but hey, you really make me happy on a cold winter day with a bowl like this!
Endive stew with bacon
The stew in these photos does not seem to play the leading role and that is correct. I have the stew spice mix from Van Beekum Spices used. And to show you what they are, I placed the unprocessed spices next to the bowl of stew.

Endive stew with bacon

Ingredients:
- 600 gram potatoes - peeled
- 400 gram endive - finely chopped
- 250 gram smoked bacon
- ½ el stew spice mix
- 50 ml milk
- 1 tl mustard

And this is how you make it:
- Boil the peeled potatoes for 20 minutes and then drain them.
- In the meantime, fry the bacon until crispy in a frying pan and let it drain over a bowl. We keep the fat.
- Drain the potatoes and put them back in the pan and pour in the milk, add 2 to 3 tbsp of bacon fat, the bacon, mustard and the spice mix and then mash!
- Mix the endive into the puree and then leave it for a while with the lid on the pan.
- Delicious bites!
The Old Dutch cuisine may not be very fancy, but it is very tasty! And often just a lot of fresh products and unprocessed vegetables. So it's not that bad! Here are a few more examples:
