There is so much to learn in the world of food and drink! Especially now that I have recently started to focus more on mixing tasty mocktails. Now that wheel was certainly invented long before I ever started, so I like to be inspired. From the English brand Lyre's from London I was sent two boxes with various spirits. A spirit is a distilled drink such as genever for example. However, this brand is 100% alcohol-free. And you can also make delicious mocktails with it. This star anise blood orange aquafaba mocktail is a modified version of their Lyre's Clover club mocktail. As they sent me in a private message: “Bring on the Madness, just without the hangover!”

Aqua wate?

In the title of this mocktail you will find a word that you may not know yet. Aquafaba, that is the liquid that is in the can with chickpeas. A very nice item wherever you go, for example Chocolate mousse can make! It is a vegan substitute for protein. When you are shaking the mocktail, aquafaba gives you just as nice a foam layer as with shaken egg whites.

Like I said, we learn a lot. For example, shaking this mocktail taught me what a “dry shake” is. This means that you first put all the ingredients in the mixing cup, shake it vigorously, then add the ice, shake vigorously again and then pour through a sieve into the glass. This way you have a perfect foam layer. Preferably you also pour it in a chilled glass. In itself, preparing these mocktails is not that complicated, you will get the hang of it soon enough. Free tip for more taste: make sure you have various types of syrup at home. You don't need much of it in a glass, but it does give that extra bit of flavor to your mocktail.

You need:

Ingredients:

  • 120 ml Lyre's pink spirit
  • 30 ml Elderflower Syrup
  • 60 ml blood orange juice
  • 30 ml aquafaba - canned chickpeas juice
  • 6 star anise
  • 150 gram ice cubes - (fill about half of your shaker)

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Grab your shaker and add all kinds of drinks and 2 star anise.
  • Shake well, they call this "dry shaking", without the ice.
  • Then add the ice cubes and shake vigorously again.
  • Pour through a tea strainer into the glass.
  • Finish the glass with a slice of orange and a star anise on the foam. You can get 3 mocktails from this quantity.
