Stewed pears. A traditional Dutch product and also from my area! The variety was bred by Mr Wildeman from Gorinchem. By the way, already in 1850, so really in grandmother's time. There are many delicious recipes to be found and these are often passed on from generation to generation in the family. For this stewed pear salad with morbier, the choice for this cheese was not very complicated. Morbier has a spicy taste and it also “stinks” well.
This spiciness and taste goes very well with the sweetness of the stewed pears. The characteristic of this cheese is the thin layer of ash that you see in the cheese. By the way, you don't taste that at all. This arose because the farmers made the cheese in two layers. The cheese has the well-known AOC quality mark and comes from the Jura in France.

And this is how you make the stewed pear salad with morbier:
-Of course we make the stewed pears first. They have to stew for a while and the best thing is to let them stand overnight. This way the flavors are absorbed well. Peel the pears and leave the stem on. Then put them in a pan and make sure there is not too much space left.
So they can sit side by side in the pan. Pour the wine into the pan and add all the spices. Bring to the boil and then let the pears stew on a low heat for an hour or two. And then move on all night.
The salad
-For the salad, we will peel the beetroot and cut very thin slices with a mandolin. Cut open the pomegranate and carefully remove the seeds. Watch out because it splatters! Grab the plates and put some lettuce on it first. Then you prepare the plate with the beetroot and figs, morbier cubes and the stewed pear in the middle.

-As a dressing, I reduced the moisture of the stewed pears with a large spoonful of sugar. This way you get an almost syrup-like dressing that tastes really delicious with this salad! Finally, serve with a nice red wine and: Delicious Happen
