Ingredients:
- 100 gram oatmeal
- 140 gram wheat flour
- 4 el shredded coconut
- 200 ml semi-skimmed milk
- 60 ml sunflower oil
- 10 gram baking powder
- 50 gram sugar substitute - (like for example Sukrin)
- 1 ei - knocked loose
Herbs / spices
- 1 el biscuit spices - mix
- 1 tl cinnamon powder
- 1 tl vanilla extract

And this is how you make it:
- Preheat your oven to 175 degrees.
- Take a mixing bowl and sift the flour, baking powder, biscuit spices and cinnamon powder into it. Mix it well.
- Take another bowl and add the milk and oat flakes and vanilla extract. Also mix this well.
- And in a third large bowl, beat the sunflower oil with the sugar substitute, then add the flour mix while beating, then the oatmeal mix can be added and finally the beaten egg and the coconut grater. Mix it well one more time and then scoop it into your muffin tins.
- Place the muffin tin in the oven for 20 to 25 minutes until golden brown. Test with a skewer if necessary. If it comes out clean, they're done. Let cool slightly on a rack.
