Instead of feta I use another ingredient that gives the salad a fresh and surprising taste: the lime. The lime is the most acidic citrus fruit there is, which makes for a great contrast to the sweet and juicy of the watermelon. It makes the salad extra refreshing and tasty. And the great thing is that it is also super simple to make.
All you need is watermelon, limes and some sugar. No more! You first make an easy syrup from the lime juice and sugar, and then let the watermelon cubes marinate in it. This way they absorb all flavors well. You can serve the salad immediately or let it cool in the fridge. It also remains nice and fresh the next day. This is really a salad that will make you happy on a hot day!

- 1 whole watermelon
- 2 limes
- fresh mint
- 30 gram granulated sugar
- 1 lime - grated peel
- 1 lime - the juice

And this is how you make it:
- Wash the limes first, then you can grate the zest of one lime with a grater. Collect this in a bowl.
- Squeeze this lime and put this juice in a saucepan.
- Then add the sugar to the lime juice and let the sugar melt slowly and then bring the mixture to a boil. Let it all bubble until a kind of syrup is formed. Want some spice in your syrup? Then add some chili flakes.
- Then pour the syrup into a bowl and let it cool.
- Take the watermelon and cut it in the middle, then you can cut thick slices of it in about the same thickness. Cut all of these into cubes and put them in a large bowl.
- Finally, add some fresh mint leaves and cut fine strips with a sharp knife. Then add it to the melon cubes and mix it together. Then, finally, pour the syrup over the cubes and toss again. Cut the other lime into wedges and serve separately with the salad.
