Making sushi. I won't claim to be a sushi master because I think it will take years. That's why I always carefully follow what's on the packaging so that I make the rice exactly according to those rules… A bit out of necessity, because as I've said before: here in the countryside there are not many sushi takeout points. This time I went to work without the rice. I made this delicious sushi with matcha hummus and mango. sushi recipe
There has been a fun recipe competition from Kikkoman for a number of years now and I thought, whoever doesn't dare, who doesn't win. You could submit a photo of your homemade dish and you can earn great prizes with it. No sooner said than done and actually with the idea of "I'll never win anything" I had already somewhat forgotten my entry. Until I received an email asking if I wanted to submit the sushi recipe because I was among the last 50! So now fingers crossed and maybe I'll get to the last 10 entries soon!

And this is how you make it:
-Because this is a sushi roll without rice, I don't think much can go wrong haha, we start with making the hummus first. Drain the chickpeas and then put them in your food processor. Add the rest of the ingredients and mix into a nice smooth hummus. Set aside until use.
-We make the mango into a mousse. This is really nothing more than finely mashed fresh mango. Deliciously pure in taste.

-You build up the sushi as follows. Place a sushi sheet on a cutting board and place the cucumber slices on top of it. You cut it very finely with a mandolin. Leave the green sheet on it. Leave about an inch at the end.

- Then spread some of the hummus over the width of the sushi roll and place the fresh cresses on it. Then put some pieces of thinly sliced smoked chicken breast on top, and finally, carefully scoop the mango mousse on top.
-Turn the roll towards you so that it is lengthwise and then carefully roll up the roll tightly. You can carefully stick the last part of the roll with some water.

And it is actually that easy… They are not such thick sushi rolls so maybe next time I will make them with rice! And who knows if I win I'll get that extensive sushi workshop in the Okura hotel and I'll still become a sushi master 😉
