Another great scampi recipe! It's probably no secret that we love scampi here at home. My daughter has been enjoying them for years, but I also like them myself. The best tip I can give you is: go for quality! Unfortunately, you can't find those beautiful large fat shrimp in the supermarket. Order them from your fishmonger, or get them from the wholesaler. Now I know that not everyone has a pass to go to the wholesaler. But as said you can just buy them on order from your fishmonger. You will see that you will get real nice fat boys with you. As far as I'm concerned, this tagliatelle scampi with avocado sauce could easily be on the menu at a nice brasserie! It is a fine pasta that you can also make quickly and put on the table in no time.

Buy good quality scampi, go to your fishmonger.

Where do those scampi or shrimp come from? They are often farmed or caught in Southeast Asia. Off the coast of Vietnam and Bangladesh. They are then transported frozen to Europe. I often choose large bags from the wholesaler. We always have a bag in our freezer. You pay about 15 euros for twenty pieces. So it is not necessarily very cheap. But that is not necessary for me. I'd rather pay a little more for good quality and then really enjoy it.

You need:

Ingredients:

  • 200 gr noodles
  • 450 gr unpeeled king prawns
  • 200 gr spinach
  • 250 gr Cherry tomatoes
  • 2 avocados
  • 3 cloves of garlic
  • 30 gr Parmesan cheese
  • 50 ml almond milk

herbs / spices:

  • fresh chopped parsley
  • salt
  • peper

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Cook the tagliatelle according to the package directions. Set aside until use. 
  • For the sauce: halve the avocados and scoop out the flesh. Mash with the back of a fork or blend until smooth in a food processor.
  • Chop the garlic finely and fry with 1 tbsp olive oil in a frying pan for 2 minutes. Add the prawns and fry for 5 minutes over medium heat until they are nicely pink.
  • Cut the tomatoes in half and turn the heat to low. Add the tomatoes to the skillet and let the spinach wilt in the pan. 
  • Mix the avocado mixture with the almond milk and stir until smooth. Add to the skillet and season to taste with salt and pepper.
  • Roughly chop the parsley and grate the Parmesan cheese. Mix with the tagliatelle through the prawns and transfer to 2 deep plates. 
  • Delicious bites!
