Sometimes you can get inspiration for new recipes in the craziest ways. This time I saw a picture of what turned out to be an English Instagram account of an English football fan who gets a snack before every game. Super funny of course, and also not very healthy, but you can't expect that from street food. So without a recipe purely and solely based on the description he gave of what he had in his hand I got started. The description was: "mixed tandoori chicken and spiced amb in flatbreads at Birmingham City”. I made a slightly healthier version of it, with a bit more vegetables than what I saw in the picture, and homemade garlic sauce. This tandoori chicken and lamb flatbread is definitely a nice treat! It will be on the table more often here.

In my enthusiasm I immediately prepared the chicken, but of course you would be better off marinating the chicken with the tandoori boemboe and then leaving it in the fridge overnight. I bought the lamb already seasoned so I didn't have to do anything to it. If you want fewer carbs you could choose a thinner vegetable tortilla for example. If you are in the mood to really go all out you can easily make the flatbread from scratch with your recipe.

Ingredients:

  • 2 flatbreads
  • 200 gram chicken thigh
  • 150 gram lamb gyros
  • 2 el tandoori bumbu
  • 6 el low-fat yogurt
  • ½ cucumber - in slices
  • 150 gram red cabbage - thinly sliced
  • 100 gram winter carrot - grated
  • 3 twigs Parsley - finely chopped
  • 1 red pepper - cut in rings
  • 1 spring onion - cut in rings

For the garlic sauce:

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Spread the chicken thighs with the boemboe on both sides and then pour the yoghurt over it. Also spread on both sides and let this soak in for a while.
  • Mix all the ingredients for the garlic sauce and let stand until use.
  • Preheat the oven to 180 degrees.
  • Grill the chicken thighs in the grill pan, the yoghurt can burn a little, that's okay. When they are nicely brown on both sides, put them in an oven dish and let them cook in the oven for a while. Then cut the meat into strips.
  • Fry the lamb in a frying pan.
  • Chop/slice/shred the vegetables as described above.
  • Bake the flatbreads briefly in the oven and then place them in a bowl.
  • First add a layer of garlic sauce, then fill it with the chopped vegetables, the meat, and finish with the parsley and red pepper and extra garlic sauce on top.
  • (you can also fold the flatbreads in aluminum foil to form a kind of durum)
