Tartar of Valtellina IGP bresaola sausage
The chance that you will find bresaola Valtellina in a supermarket is small. Let me already say that, for this you will have to go to an Italian specialty store. Or a cheese-sausage farmer with an extensive range. Once you have found it, you can get started with this bresaola recipe. Sometimes this sausage, which is often served wafer-thin, is mistaken for carpaccio. But that is not the case, that is raw meat.
Bresaola is dried for at least 3 months. In theory, it is actually not a tartare, this tartar of Valtellina IGP bresaola sausage. But rather we serve it the way a “normal” tartare is served.

Ingredients:
- 240 gram bresaola Valtellina sausage
- 1 bush green asparagus
- 30 ml olive oil
- 1 tablespoon mustard
- 4 white sandwiches
- 1 clove of garlic
- 1 citroen
- 3 fresh parsley sprigs
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Chop or cut the sausage into very small cubes with a sharp knife.
- Take a small bowl and add the mustard, olive oil, lemon juice and finely chopped parsley. Blend everything into a nice smooth sauce. Mix the meat with this sauce.
- Wash the asparagus and cut off the bottom. With a mandolin cut the asparagus into very thin fine strips.
- Drizzle some extra olive oil on the sandwiches and spread with the garlic clove. Grill or roast them. Then cut out a nice circle with a cooking ring.
- Leave the round of toast in the ring and spread the meat, push a little and then carefully remove the ring.
- Place the asparagus snippets on the meat and drizzle some olive oil on it. Garnish with a pickle and caper apple, if desired.
