Tartar of Valtellina IGP bresaola sausage

Tartar of Valtellina IGP bresaola sausage with asparagus

Estimated reading time: 4 minutes

The great thing about being a food blogger is constantly discovering new flavors. But also learning more about the background of the products we eat. This is often done at the invitation of the brand, or the country of origin with a beautiful event. Times are forced to change and this allowed me to do a tasting at home. A nice box with real Italian wines, cheese and meat was delivered to me. And in my own living room I learned a lot more about, for example, the fine piece of meat bresaola. When purchasing, make sure that there is a quality mark on the packaging. Tartare recipe from Valtellina IGP bresaola sausage

Beautifully dried red meat with a lot of smell and taste.

This guarantees that you have the real Valtellina sausage. I made a delicious tartare of Valtellina IGP bresaola sausage with it. A recipe that falls into the “basic” category because you can make a top dish with very few ingredients. tartare recipe

Tartar of Valtellina IGP bresaola sausage

The chance that you will find bresaola Valtellina in a supermarket is small. Let me already say that, for this you will have to go to an Italian specialty store. Or a cheese-sausage farmer with an extensive range. Once you have found it, you can get started with this bresaola recipe. Sometimes this sausage, which is often served wafer-thin, is mistaken for carpaccio. But that is not the case, that is raw meat.

bresaola valtellina
A wonderful recipe that you can serve as an appetizer.

Bresaola is dried for at least 3 months. In theory, it is actually not a tartare, this tartar of Valtellina IGP bresaola sausage. But rather we serve it the way a “normal” tartare is served.

If you buy these types of products, pay attention to the quality mark

As with so much food from certain areas that can be quite exclusive, "copycats" arise. Think of Gouda cheese that is freely made all over the world. If a product has a quality mark, you know for sure that it comes from where it is supposed to come from. And you therefore also support the people who have been making their product with love and passion for decades.

Due to authors and copy rights I do not post the photo from the GQ magazine here, but only my own photos.

Here you will find the complete recipe with all the ingredients you need. I hope you have fun preparing the dish below.

You need:

sharp knife

Ingredients:

  • 240 gram bresaola Valtellina sausage
  • 1 bush green asparagus
  • 30 ml olive oil
  • 1 tablespoon mustard
  • 4 white sandwiches
  • 1 clove of garlic
  • 1 citroen
  • 3 fresh parsley sprigs

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Chop or cut the sausage into very small cubes with a sharp knife.
  • Take a small bowl and add the mustard, olive oil, lemon juice and finely chopped parsley. Blend everything into a nice smooth sauce. Mix the meat with this sauce.
  • Wash the asparagus and cut off the bottom. With a mandolin cut the asparagus into very thin fine strips.
  • Drizzle some extra olive oil on the sandwiches and spread with the garlic clove. Grill or roast them. Then cut out a nice circle with a cooking ring.
  • Leave the round of toast in the ring and spread the meat, push a little and then carefully remove the ring.
  • Place the asparagus snippets on the meat and drizzle some olive oil on it. Garnish with a pickle and caper apple, if desired.
  • Delicious bites!
