I am super happy that I can participate in a fun recipe contest for food bloggers. The theme is corn and I came up with a delicious BBQ side dish with corn in the lead role. It is a tempura corn snack with nori, a type of Japanese seaweed. It is very easy to make and the result is delicious. You only need a few ingredients for this Tempura recipe: corn, nori, flour, egg white and spa red.

You mix everything together and deep fry it in hot oil. You get crunchy balls that are sweet and salty at the same time. They are perfect to serve with your BBQ or as a snack. I'm very curious what you think! I've already seen a lot of beautiful creations from other bloggers, so the competition is fierce. But I hope you give my recipe a chance too. And this is how you make the Tempura corn snack with nori:
-Remove the corn from the can and drain in a colander.
- Grab a cutting board and a super sharp knife, chop the nori sheet completely into very fine pieces. Then add it to a bowl and mix in the corn kernels with one tablespoon of flour. Toss to coat the corn kernels with a thin layer of flour.
-Take another bowl and add the 125 gram flour, the cornflour and the salt, mix this together.
- Heat the peanut oil in a pan. If you want to make sure it's hot, insert a skewer. If the oil bubbles when you put it in it is hot enough.
- In a third bowl, beat the egg whites until fluffy and foamy and then add the red spa.
-Now add the spa/egg mix to the bowl with the flour mix. Do this with a fork or whisk and stir very gently. The batter should not be mixed too hard or it will lose its fluffiness.
Baking the snacks:
-With a ladle you now spoon some batter over the corn kernels and stir this through. Make sure that the corn kernels do not get too much batter on them. (I did that the first time and then they became huge flour balls and you don't want that.) So you only need a very thin layer over the grains.
-With a spoon, carefully slide a small heap of corn-tempura mix into the oil. Note that this splashes a lot, so watch out for your hands or fingers. They only need to be in it for a very short time, until they are a nice golden brown. Place them on a baking tray. Don't put too much mix in the pan at a time because then everything will stick together.
-You can keep the rest warm in the oven while you're baking some in the pan each time. Then set your oven to 160 degrees.
