Every now and then I get the question whether I really make everything myself and do not use packages and bags. That is often the case, but in these teriyaki Udon noodles with pumpkin I used two things from a bag and a jar. Namely a small bag of teriyaki sauce and a few tablespoons of black bean garlic sauce. Nice and easy and fast! On the other hand, it is a wok full of fresh vegetables, so a nice combination of partly homemade and partly ready-made. And this is how you make the Teriyaki Udon noodles with pumpkin:
We start with the vegetables, let the cans with bamboo shoots and corn on the cob drain in a colander over your sink. Grate the carrot clean and cut it through the middle, then into slices. I already bought pre-cut pumpkin cubes from the fresh produce, which saves a lot of time cleaning.
Take a large wok and add some wok oil. Fry the chicken cubes until tender and golden brown. You can sprinkle some 5-spices on the chicken for taste. Set aside on a plate or bowl until use.

Add a little extra oil to the wok and stir-fry all the vegetables for about 10 minutes until al dente. Now add the teriyaki sauce and the garlic sauce and stir well.
The Udon noodles always stick together a bit when you take them out of the package, so I always loosen them with my fingers first, then they go into the wok with the vegetables along with the chicken.

Finally, pour the soy sauce through the wok and toss the pan one last time. Now it is ready to serve. Spoon the noodles with the vegetables in a bowl and serve immediately: Delicious Happen
