These shrimps can be recognized by their black stripes on their shell and their large size. They are native to the Indian and Pacific Oceans, where they live in tropical and subtropical waters. But like many other sea creatures and fish, they can easily move to other areas. They are not bothered by boundaries or barriers in the water. Ingredients:

  • 20 tiger shrimp
  • 6 mature big tomatoes
  • ½ rode p
  • 1 small Spanish / chili pepper
  • 3 toes Garlic
  • 1 tin can tomato paste - (the smallest can about 70 gr)
  • 1 big white onion
  • fresh basil leaves
  • salt
  • peper
  • Persillade (spice mix)
  • olive oil
  • 2 el Paprika powder
  • wine vinegar

And this is how you make it:

  • Bring a pan of water to the boil. Make a cross in the tomatoes with a knife. Submerge them in the hot water and let them soak for a few minutes until the skin comes off. Fish them out of the pan with a slotted spoon. Carefully peel off the skin and chop finely. Place in a bowl and keep until use.
  • Chop the onion, the red pepper, the garlic cloves and cut the bell pepper into very fine cubes.
  • Take the frying pan and add the tomato paste first, fry it for a minute or two. Add the paprika and fry. Then add 3 to 4 tbsp olive oil.
  • Now add the onion, garlic, red pepper and diced bell pepper and fry for about 5 minutes.
  • Deglaze with a dash of wine vinegar and then add the chopped tomatoes. Add 100 ml of water. Season with salt and pepper and some finely chopped fresh basil leaves. Now let the sauce simmer on a low heat for about 20 minutes.
  • Defrost the shrimp and season with salt, pepper and two tablespoons of persillade mix. Fry them nice and pink in the wok with some olive oil.
  • Spoon the sauce into bowls and top with the shrimps, finish with some fresh basil.
  • Delicious bites!
Serve with a fine paste such as linguine or orzo.
