Mustard. I love it! For as long as I can remember, and even as a child I loved to eat it. Which is of course quite special because mustard can have a sharp taste. Especially the Dijon mustard, which is known for being a sharp mustard. Maille Dijon sent me a package with all kinds of different flavors of mustard. My foodie heart overflowed with love because the fact that they sent me this was super sweet. Of course I tasted them all and I can say that I am certainly not disappointed. And then of course you also have to make something with these delicacies.
And this is how you make it:

-First add the aubergine and turn on your oven to 200 degrees. Then line a baking tray with baking paper and cut the aubergine in the middle. Cut a checkered pattern into the aubergine with your knife and put it in the oven for half an hour. Let it cool for a while and then scrape the flesh from the aubergine.
- Grab your food processor and put the pulp in it. Add two teaspoons of mustard, salt, pepper to taste and a splash of olive oil. ( 40 ml) Turn the whole into a soft mousse and voilà your spread is ready!
-In the meantime, bake the bread in the oven if you use a baking bread like me. Then cut it into nice coarse thick slices.
- Spread the eggplant spread on the bread first and then put some slices of cheese on top. Top with some grapes and pine nuts.
