Today I want to tell you about one of my favorite dishes: the toast recipe with fresh blackberry sauce and goat cheese. I make this regularly when I feel like something tasty and easy. It's so simple to make, but the result is so delicious!
I really like this period. Fresh blackberries, blueberries, raspberries you name it! I like to pick them myself in nature or buy them from the local farmer. They are so sweet and juicy, and they are full of vitamins and antioxidants. I like to use them to make a delicious sauce that I spoon over my toast.
I am also a big fan of goat cheese. It has such a nice creamy and slightly sour taste that goes perfectly with the fruit. I spread it generously over my crusty bread, which I first put in the oven or in the toaster. I usually use a rustic bread with a lot of pit and structure.
To top it all off, I garnish my toast with some fresh spinach leaves, some loose fruit and a leaf of mint. That gives it just a little extra color and freshness. Not only does it look beautiful, but it also tastes heavenly!
I like to serve this toast with fresh blackberry sauce and goat cheese for lunch or as a small starter for a summer dinner. It is a dish that everyone can appreciate, young and old. You can also easily adjust it to your own taste. For example, if you don't like goat cheese, you can also use ricotta. Or if you like it more savory, you can add some bacon or ham.

Ingredients:
- 1 rustic bread
- 1 tray blackberries
- 1 tray blueberries
- 1 bag vanilla sugar
- handful of spinach
- cornstarch
- goat cheese - spreadable
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- First take a pan and put the blackberries and blueberries in it. Save some to use later for decorating.
- Pour about 50 ml of water into the fruit and the sachet of vanilla sugar. Bring to the boil and let it simmer for a few minutes until the fruits are soft.
- Preheat your oven for the bake-off bread, if you use fresh bread, you can immediately cut it into nice slices to grill it. Bake the bread in the oven until it is cooked and then cut into nice slices, put it under the grill for a while until you have a crispy toast.
- Place the goat cheese in a bowl and mash it with a fork. If you use fresh goat cheese, this is not necessary. You can often buy these at a good cheese shop.
- When the fruits are soft in the pan, you can mash them a little further with a fork. Make a paste of 2 tablespoons cornstarch and some water. Pour this into the fruit while stirring and let it completely absorb into the liquid. Now your sauce will firm up a bit.
- Grab a plate or serving board and place the toast on it. Spread with the goat cheese and then spoon the blackberry sauce on top. Garnish with the fresh spinach leaves and some loose fruits
