My daughter's favorite soup is tomato soup. She finds other soup “dirty” so I make fresh tomato soup quite regularly. In this soup we first roast the tomatoes in the oven. This makes them nice and soft and the vegetables have a lot of flavor. This tomato soup of roasted tomatoes also contains different types of tomatoes. I have used Roma and Sherry tomatoes. And this is how you make the tomato soup from roasted tomatoes:

-Preheat your oven to 200 degrees.

-Take a large baking dish and cut all the tomatoes into quarters. Cut the cherry tomatoes in the middle. Place all tomatoes in the bowl. Clean the garlic cloves and add them to the bowl, season with salt and pepper and drizzle over some olive oil. Then put the dish in the oven for 35 minutes to let the tomatoes soften completely.

Then peel the potatoes and chop the bell pepper and onions. Take a stockpot and add some olive oil. Then fry the potatoes, onions and peppers for 6 minutes. Then add the tomato paste and stock and stir to combine. Then let it boil gently.

- Tear the basil leaves and add them to the pan. Remove the baking dish from the oven and spoon the contents into the stockpot.

-Finally, use a stick blender and mix it all into a nice smooth tomato soup of grilled tomatoes. If you want it really silky smooth, pour it through a colander to remove any remaining skins and seeds.

  • 1 kilo roma tomatoes
