Tuna tower with cucumber salad

At my regular fishmonger Heinen I can call Edward in advance and place my order. So I always have the freshest products fresh from the auction. This time I therefore ordered fresh tuna with him. If it is super fresh you can make a delicious tuna tartare with it. You don't have to add much to this and it is super tasty. And this is how you make the Tuna tower with cucumber salad:

We'll make the cucumber salad first. Take a bowl and add all the ingredients for the dressing in it. Take a whisk and beat it to a nice smooth dressing. Cut the cucumber in half and with a spoon grate the soft part with the seeds out. Then cut the cucumber into thin strips. Peel the red onion and cut it in half and then into thin strips. Add to the dressing and mix well. Then put the bowl in the fridge until use.

-Take the (thawed) filo dough and cut it into narrow strips that you cut in the middle again. This way you get small rectangles. Take a baking pan covered with baking paper. Place one sheet on top and brush with some melted butter with a brush. Then sprinkle some seeds on it. Do this four times and finish on the top with the seeds. Heat the oven to 200 degrees and place the baking tin with the filo sheets in the oven for about 15 minutes until the sheets are golden brown.

-While the skins are baking, we cut the tuna into nice cubes of about half a centimeter with a super sharp knife. Then put them in a bowl and pour a little bit of soy sauce over it and sprinkle some freshly ground pepper on top.

-In a frying pan, fry a few sprigs of samphire for two minutes. Then cut them a bit finer and add them to the tuna.

-And then when the filo dough sheets are ready, take them out of the oven and take the bowl with the cucumber salad.

Finally, take the plates and a number of small containers for the salad, spoon them into the containers and place them on the plate. Start with the filo pastry sheets first. Ingredients:
