Well, my pantry is just as full as anyone else's. Because of press packages that I get sent and from suppliers who keep restocking. Time for some "zero waste recipes" where we will mainly use our stock. Often it is processed very quickly under steam, for example, which helps to preserve the nutritional value of these products. They are often rich in essential nutrients and fibers, and hardly contain any extra additives.

Of course, there are also packages that are full of sugars, preservatives, E-numbers and other junk, but you are responsible for that yourself; it is important to be critical. Read what you buy before you throw it in your basket, and be aware of the benefits of well-packaged food, which in many cases can be a convenient and responsible choice for a busy life, where fresh products are not always feasible. It is all about making the right choices and being informed about what you consume.

Ingredients:
- 300 gram chicken breast - in cubes
- 1 Red pepper - cut into pieces
- 1 ui - XNUMX onion - shredded
- 1 package lentils in spicy tomato sauce - (from Boon beans) *see notes below.
- 4 el salsa
- 4 el crème fraîche
- 4 small tortillas
- 100 gram cheddar cheese
- 2 sprigs of fresh parsley - finely chopped
- 1 el chicken seasoning
- 2 el olive oil
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Season the chicken fillet cubes with the chicken herbs.
- Cut the pepper and chop the onion and parsley.
- Heat the frying pan with a dash of olive oil
- Fry the onion until translucent and then add the pepper and the lentil mix. Add a little water and stir well. Let the mixture simmer for a while over a low heat.
- Preheat your oven to 200 degrees.
- Add the chicken to the frying pan and let it cook. (make sure that most of the moisture has now evaporated so that you do not have a sauce that is too wet.)
- Take the containers for the tortillas, place a tortilla in them and spoon the lentil-chicken mix into the tortillas. Sprinkle the cheddar on top and place in the oven for 20 minutes.
- Remove from the oven and carefully remove the ramekins from the mould. Spoon a tablespoon of crème fraîche and salsa on top, and sprinkle with some fresh parsley.
