In the Surinamese kitchen they know what to do with a nice piece of spiced kip. A few years ago I still worked in Rotterdam and there was a small shop in the building next to me. They also made those delicious sandwiches here. At least twice a week I got my lunch from there and always with extra sweet and sour cucumbers. And of course a sandwich kip, nicely spiced with curry. But they also sold roti and those big plastic cups with saoto soup. In any case, it is a pity that we have very few nice eateries here in the countryside like in the city center. That makes me more creative myself, but from time to time I do miss the convenience of the store no longer sitting next to me. With a little sadness I made this tortilla myself with Surinamese spiced kip.

Here in the countryside it is therefore not so easy to get fresh products from the toko. For example, long beans are not available here at all, and also many marinades and other tasty herbs I really have to drive a bit for that if I want to find a shop. That's a shame, because I really like Asian cuisine and the flavors that go with it. Fortunately, I have found a few alternatives that I can use when I feel like an oriental dish. For example, I can use green beans instead of long beans, or make my own marinade with soy sauce, garlic, ginger and honey.

I also always have some dried herbs and spices at home, such as curry, turmeric, coriander and sambal. I can also make a lot of tasty things with it. And if I really want something special, I just order it online or go into town once in a while to stock up at the toko.

It is funny that in the different neighborhoods where I lived in Rotterdam I lived either next to or really close to a toko! One district is more multi-culti than the other, but always many different eateries and shops. Yet you can't just get me back into town because living so freely and having a nice garden weighs a bit more heavily… And now I can cook quite nicely myself, so I just make it myself.

You need:

Ingredients:

  • 300 gr chicken thigh
  • 3 toes chopped garlic
  • 1 witte chopped onion
  • 75 ml marinade - ( I used Paloeloe )
  • 3 sweet potatoes
  • 200 gr green beans
  • 2 eggs
  • 2 tortillas - (I used Nofairytales)

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Cut the chicken thigh into cubes, chop the onion and garlic cloves and place in a bowl. Add the marinade. Place in the fridge and let it marinate overnight.
  • Boil the beans and the sweet potato in a pan until al dente, you can do this together, you can also cook it separately. Drain and let drain.
  • Take a frying pan or wok and fry the chicken with the marinade until almost cooked, then add the beans and sweet potato and fry until everything is cooked through.
  • Boil the eggs.
  • Place the tortillas on the plates and spoon the chicken mixture on top, finish with the egg.
  • Delicious bites!
