When they are finally in season, I will go for them too! And fortunately my husband thinks the same way, so asparagus is often on the table here. Very simple with an egg and some ham is already a meal fit for a king, but this two-colored asparagus quiche with salmon was also very tasty. In this recipe we use the dough for a flammkuchen, which is nice and thin. For a festive brunch you can serve this asparagus quiche with white asparagus and asparagus quiche with salmon, both of which are wonderfully creamy and tasty. Where does that flammkuchen come from? From Alsace, but that's in France, isn't it? Yes, that's right, but the national borders have been different in the past. You can clearly see from the houses in Alsace that there has been a German influence with houses with those beautiful dark beams. Created by bakers who rolled out their bread dough very thinly to test the temperature of their often wood-fired ovens.

Flammkuchen is a traditional dish from Alsace, consisting of a thin layer of dough topped with crème fraîche, bacon and onion. The name literally means "flame cake", because the dough was baked in a very hot oven. If the temperature was too high, the dough could catch fire, hence the name “flammkuchen”. The dough is so thin that it almost becomes crispy, just like a cracker.

This makes the Salmon Quiche a light and airy dish, which is much less heavy on the stomach than quiche dough or pizza dough. You can serve flammkuchen as a tasty snack with drinks, or as a complete meal with a nice salad. You can also vary the toppings, for example by adding cheese, mushrooms or apple.

Ingredients:

  • 1 role flammkuchen dough
  • 10 witte asparagus
  • 6 green asparagus
  • 1 tin can flagolettes (beans)
  • 3 eggs
  • 100 gr smoked salmon
  • 3 el crème fraîche
  • 2 el mascarpone
  • 3 el Parmesan cheese

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat your oven to 200 degrees.
  • Cut off the woody ends of your asparagus and peel the white ones. Steam or cook both asparagus colors for 10 minutes.
  • Line your quiche tin with baking paper and then cover with the flammkuchen dough. Drain the can of flagolettes.
  • Take a bowl and mix the eggs, crème frache, flour and mascarpone into a smooth mixture. Season with salt, pepper and the persillade.
  • Cut the asparagus into 3 cm pieces and place them on the dough in the quiche tin. Top up with the flagolettes and pour in the mix.
  • Finish with the smoked salmon and sprinkle with the Parmesan cheese and put in the oven for 25 to 30 minutes.
