I love mustard and really enjoy a delicious mustard sauce with my meals. It's so easy to make your own sauce! No ready-made packages and bags, just spend a little extra time in the kitchen. And in my case I like to add a good dash of white wine. This gives the sauce an extra dimension of flavor and creates extra fun in the kitchen while cooking. And this is how you make the Pork tenderloin with mustard sauce:
- I bought the potatoes that I used at the Albert Heijn. These come in a nice aluminum box that you can put in the oven. Super handy and you only have to cut the potatoes in the middle and sprinkle some herbs in it. Preheat your oven to 200 degrees and bake the potatoes with a dash of olive oil for 30 minutes.
-In a pan with water and some salt, cook the string beans for 15/20 minutes.
-Fry the mushrooms in a frying pan. I cleaned them and then cut them into four quarters, when they are baked you set them aside until use.
- Cut the pork tenderloin into slices and sprinkle some herbs on it, then bake the tenderloin until done.
Making the sauce
So making the sauce is not difficult at all. Heat the butter in a pan and when everything has melted, add the flour. Bake this briefly. Deglaze with the wine while stirring and keep stirring. Then add the stock and the cream. Season with the mustard and the finely chopped leaves of 1 sprig of rosemary. Add some more salt and pepper if needed. Et voila a delicious homemade mustard sauce!

Take a large bowl and put the potatoes and mushrooms in it first and toss them together. Then add the drained string beans and finally put the pork tenderloin on top. Pour the sauce over this and serve: Delicious Happen!
