We also regularly eat vegetarian dishes here. I prefer to eat consciously vegetarian and "plant-based" than to use meat substitutes. Then I don't have to miss the meat when I eat. Trying to replace something with something else actually only makes me miss the original piece of meat. This vegetarian avocado bean taco is filling! A nice taco recipe is this vegetarian tacos recipe, where you fill the tacos with beans, corn, cheese and salsa.

That's because the beans are a good source of protein. And a few big spoonfuls of guacamole also finish it off. If you fancy a Mexican meal, you can choose between a taco or a tortilla. In fact, a tortilla is just the pancake. The taco is the dish with the filling in it. Real Mexican tacos are made with a soft tortilla. Not those crispy yellow shells from the supermarket. We make a guacamole from the avocado, I love it.

Spice it up! You can make this vegetarian avocado bean taco very spicy! Serve with a salsa and cut an extra red pepper through the guacamole. This is of course optional, I am more of the Tex-Mex version than the hardcore Mexican version. A little spicy but not too crazy.

The other day I bought a salsa and the flames shot out of my mouth. Then I can no longer enjoy the dish. The Mexicans also love coriander….. You won't find that with me either because I think it tastes like soap. Give me parsley! With this taco recipe you can vary to your heart's content. You need:

Ingredients:

  • 4 soft tortillas
  • 1 can of black beans
  • 1 Red pepper
  • 1 white onion
  • 2 cloves of garlic
  • 3 fresh parsley sprigs
  • 3 el Mexican spice mix

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Wash the vegetables, peel the onion, remove the seeds from the bell pepper and the skin of the garlic. Chop/chop everything finely.
  • Drain the black beans in a colander.
  • Take a frying pan and add a little olive oil in it. Saute the onion and garlic until translucent. Then add the spice mix and fry for a while.
  • Add the bell pepper and beans and fry for a while.
  • In a frying pan, briefly heat the tortillas and add the bean mix, serve with a few spoonfuls of guacamole. The link to that recipe is in the notes.
