We regularly eat a curry here at home. Besides that it has plenty of taste, it is also very easy to make. Fair Trade Original sent me a nice package with their newest vegetable spice paste. The Butter Chicken spice paste, and challenged me to make a delicious butter chicken recipe with it. And that certainly worked out well, although a classic curry like this does not contain vegetables, I did add it. If you fancy a delicious butter chicken, but vegetarian, then you have to try this curry with chickpeas and coconut milk.

It's a delicious way to enjoy the rich flavors of India without missing out on meat. First of all, you make a creamy sauce with coconut milk, tomatoes and herbs, which is full of flavor.
Then add the soft bamboo shoots, which go well with the sauce. In addition, you can also add an extra red pepper to give it extra spice, because my husband likes a bit of spice! But of course you can adjust this to your own taste. Finally, serve this vegetarian butter chicken curry with bamboo shoots with rice or naan bread, and you have a delicious meal on the table in half an hour!

I made this butter chicken curry extra tasty by adding mango and red pepper. The sweet mango gives a fresh counterpart to the spicy curry, and the red pepper provides some extra spice. Of course you can decide how spicy you want it to be. Serve this butter chicken curry with rice and naan bread, and you have a feast on the table!

- 1 Butter chicken herb paste - from Fairtrade Original
- 1 Spanish / chili pepper - cut into rings
- 270 ml coconut milk - can of Fairtrade Original
- 400 gram basmati rice - from Fairtrade Original
- 1 mango - cut in pieces
- 1 tin can bamboo shoots - leaked
- 1 el butter
- 1 el wok oil
- 100 ml cooking cream
- 300 gram vegetarian chicken pieces
- 4 naan
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Chop the onion, cut the red pepper into rings, peel the mango and cut into small cubes.
- Drain the bamboo shoots in a colander.
- Cook the rice according to the package, preferably of course in a rice cooker for the perfect result.
- Squeeze the spice paste out of the bag and put it in a bowl along with the chicken pieces. Add a little wok oil, mix well and let it marinate for a while.
- Heat the wok and add the butter and wok oil and add the chopped onion. Add the chicken pieces, mango and bamboo shoots and fry for a few minutes. Pour in the coconut milk and cream and let it simmer for a while.
- Spoon the rice onto plates or in bowls and add the curry, garnish with red pepper and serve with some naan.
