And another delicious zero waste soup! I was left with a tub of shredded carrots and some red peppers. I had actually thought of the carrots for another dish. But that faded into the background and when I saw the tank days later, the roots were already drying out a bit. In the click with it? Well, that's really an eternal sin. My “go-to” processing of these forgotten vegetables is always a soup. Super easy, so made and you secretly eat a lot of vegetables. We make a vegetarian carrot and pepper soup with an easy stock. I have a large glass jar in my cupboard with organic vegetable stock. All you need to do is add a tablespoon or two and some water and your soup is ready. Vegetarian carrot pepper soup
If you want to make a vegan carrot soup, this recipe is perfect for you! The broth consists entirely of vegetables. But that doesn't detract from the taste, because this soup is delicious. For this recipe I use products from KoRo, which I store in beautiful glass jars. KoRo supplies products in large packages, so you don't have to go to the supermarket all the time. In addition, many of their products are organically grown.
That is very important to me. This soup is also ideal if you have an energy dip around four o'clock in the afternoon. You can easily freeze the rest of the soup and reheat it later.
Some of those soups go to my mother-in-law, and some I eat later. I always freeze it in single servings. That thaws quickly and I always have a nice stock of, for example, this vegetarian carrot and pepper soup.

- 2 red peppers
- 1 white onion
- 10 roots
- 2 tablespoons vegetable stock
- 2 tablespoons olive oil

And this is how you make it:
- Clean the peppers and remove the seeds.
- Roughly chop the carrots, onion and peppers.
- Put the olive oil in the pan and first fry the onion until it is translucent, add the carrots and bell pepper and fry for a few minutes.
- Add a liter of water and the vegetable stock and bring to the boil. Let it simmer for about 20 minutes until the vegetables are completely soft.
- With your immersion blender you puree the whole into a nice smooth soup.
