A tasty homemade vinaigrette really makes your dish as far as I'm concerned. I should really write another monster blog about all my own recipes. Because to date, that shelf in the supermarket has really been neglected! And that while it is not that complicated at all, mix ingredients in a measuring cup, with a whisk et voilà! The aniseed taste of the fennel goes very well with the mustard, and of course we season it with my own persillade mix! Fennel does not seem to be very popular in Dutch households, because when I look around me I see other food colleagues do very little with it. It's a shame because it is very healthy and fennel is also known for its medicinal seeds. Maybe I will change your minds with my fennel recipes! Fennel is a white-green tuber that you can prepare in different ways: raw in a salad, stewed, grilled, roasted or in a soup or risotto. Fennel has a refined, anise-like flavor that combines well with sweet and savory ingredients.

You need:

Mandolin

Ingredients:

  • 1 fennel
  • 4 twigs kervel - herb

For the vinaigrette you will need:

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Take the mandolin and cut the fennel with it. Be especially careful, you don't want to cut off a piece of your fingers!
  • Finely chop the chervil and add it to the fennel.
  • In a bowl or a smooth, mix all the ingredients for the dressing. Shake or whisk into a vinaigrette and pour over the fennel. Let marinate in the fridge for a few hours.
  • Serve with dinner or with a nice piece of bread.
  • Delicious bites!
