It really was almost incomprehensible. As a huge mustard lover, I didn't have a recipe for mustard soup on my website until recently. But with the addition of this delicious Fennel soup with leek and a spicy mustard, I quickly changed that. The unique aniseed flavor of the fennel combines surprisingly well with the sharp, characterful taste of the mustard used. The leek, which I had lying around, gave me the perfect opportunity to use up leftovers and adds an extra dimension to this soup. It sometimes seems like recipes are too simple to write down, but experience shows that there is always someone who shouts: “Do you have a recipe for that?” And yes, that's what I have now: a delicious leek and fennel soup recipe, ready to be shared.
And this is how you make the fennel soup with leek:
- First wash the vegetables well so that there is no more sand between them. Then finely chop the fennel, leek, onions and garlic cloves.
– Put a little olive oil in a stockpot and braise the vegetables in it, including the garlic, for about 10 minutes. Then add the mustard and crumble the cubes of boullion on top. Add half a liter of water and let it simmer for about thirty minutes.
-Finally, grab your immersion blender and start mixing!

And so you have a delicious fresh soup. No fuss and super fresh. Serve with a little freshly ground pepper and nutmeg.
