- Add half of the flour and mix until smooth. Then add the salt and sugar, mix well again and add the rest of the flour little by little (while mixing).
- Then proceed by hand and knead the dough into an airy mass. If the dough is too sticky, add some more flour.
- If you are making multiple plates, divide the dough into equal parts. Take the baking tray and pour a dash of olive oil on it. Place the dough on the oil, then turn it over so that both sides are coated with oil. This way the dough does not dry out. Let the dough rise for an hour.
- Meanwhile, drain the peeled tomatoes in a colander. Then puree it with a stick blender together with the capers.
- When the dough has finished rising, press it towards the edge so that it is evenly distributed. Make sure the edge is slightly raised.
- Top the pizza with tomato sauce, diced mozzarella and oregano. Pour a dash of olive oil over the pizza and put the pizza in a preheated oven at 240 degrees for about 15 minutes.
- Make sure that the edge is crispy, the mozzarella has melted and the bottom comes off well.
