Secretly I already have a vitello tonnato salad recipe on my site. But there could be one more. Why did I choose that? Well Tim from the food blog "recipes ninja” asked me if we could do a recipe swap. He searches my blog for one of my more than 800 recipes that he likes best. And I popped up on his site and came across this topper. I especially liked the combination of the tuna mayonnaise with a fresh pesto. I regularly speak to Tim via Instagram where he asks me all kinds of questions because he has only just started his blog. And he happily continues to experiment, not only with homemade cottage cheese, but also with sourdough bread, a culinary art that is not for everyone. Personally, I don't dare, I laughingly admit that I prefer to buy my bread at the local bakery. Anyway, let's focus our attention on the delicious vitello salad, prepared with a homemade pesto according to Tim's recipe, a true taste sensation that you should certainly not miss.
Vitello salad with homemade pesto
Vitello tonato is an Italian dish consisting of thin slices of poached veal, served with a sauce of tuna, anchovies, capers, lemon juice and mayonnaise. It is usually eaten as a cold starter.
So you can see that with a basic recipe like vitello tonnato you can do many things. It may seem crazy to cover meat with a tuna mayonnaise, but it's a perfect match. A kind of surf&turf shall we say. The crispy phyllo dough that Tim made was well received here at home by my daughter. The simpler things are sometimes, the tastier it is.
Just bake in the oven with some oil and sesame seeds and you suddenly have a very nice taste sensation on your plate.

Ingredients:
- 400 gram veal fricandeau
- 3 sheets of filo dough
- 1 el hairdresser apples
- 1 bunch of curly lettuce
- 1 el Sesame seed
For the tuna mayo you will need:
- 1 can of tuna in water
- 4 anchovy fillets
- 3 el half vanaise
- 1 el capers
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 200 degrees.
- With a cutter you cut out some figures from the thawed filo dough. Brush with some olive oil and sprinkle with black sesame seeds. Bake them briefly in the oven until they are golden brown, so keep an eye on them because that goes fairly quickly.
- Wash the lettuce and pat or spin dry in a salad spinner.
- Take your (small) food processor and add all the ingredients for the tuna mayo. Blend to a smooth sauce. Place in the fridge until use.
- Clean your machine and then add all the ingredients for the pesto and turn into a nice pesto.
- Grab your bowls or plates and put some lettuce in it first. Drizzle some tuna mayo on top. Cover with some veal fricandeau, with a spoon spread a "wipe" mayonnasie next to the lettuce and partially fill it with the pesto.
- Finish with some crisps and caper apples.
