I did use pieces of dried truffle, which you can buy in a specialty store or wholesaler. Or go to a nice Italian caterer, they will also sell it. Don't use too much of it, otherwise the taste will really dominate.
For an extra taste sensation, you can also experiment with other delicacies, such as refined olive oil or finely chopped herbs. These ingredients add even more depth to the dish. It is important to use the truffle sparingly so that the unique flavor does not dominate. Enjoy a wonderful culinary experience with these special truffle creations.

Ingredients:
- 2 kg white onions
- 50 ml truffle oil
- 1 ltr beef boullion
- 2 bay leaves
- 3 Juniper berries
- 4 el dark brown sugar
- peper
For the puff pastry spoons:
- 4 sheets puff pastry
- grated Parmesan cheese
- dried black truffle - grinded
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Peel the onions and cut them into half rings.
- Heat the frying pan and add the truffle oil. Fry the onions over medium heat, stirring, until they are nicely browned. Then add the caster sugar and let them caramelize on a low heat for another 10 minutes or so. Season with some black pepper.
- Put everything in the stockpot and add the stock, juniper berries and the bay leaf and let it simmer for an hour.
- In the meantime, we bake the puff pastry spoons.
- Preheat your oven to 200 degrees.
- Cut spoonfuls out of the thawed sheets of puff pastry and place them on a baking tray lined with baking paper. Sprinkle with the Parmesan cheese and some freshly ground black dried truffle. Bake for 15 minutes until they are a nice golden brown.
- Ladle the soup into the bowls, and serve with the puff pastry spoon.

Hi Anita, I bought a jar of dried truffles at Sligro, but you can also easily order it online. If you search for black truffle, plenty of online stores will appear as an option. Or go to a delicatessen near you, they often have it too. Gr Francine
