Scrolling through Anouk's website I came across a Waldorf salad. This time I got Anouks cookbook assigned in the #swiepswoepswap challenge. I hear you thinking…. That is an exchange of recipes between different food bloggers. And strangely enough, I didn't have this classic on my website yet! So it is high time to change that. Waldorf salad with a nice twist
The name of this salad comes from the Waldorf-Astoria hotel in New York. He was first served there in 1893. Actually, it is a super simple salad, because at that time there was not really the “haute cuisine” culture that we know today. The famous French chef Auguste Escoffier included the salad in his "Cookbook of Classical Cuisine" and therefore this salad can rightly be called a real classic.

Ingredients:
- ½ celeriac
- 1 sweet call
- 1 sour call
- 1 rode grapefruit
- 1 bush frisee salad
- 100 gr walnuts
- 50 gr raisins
- 2 stems celery
- twigs ½ citroen
For the dressing we use:
- 4 el mayonnaise
- 5 el yoghurt
- twigs ½ citroen
- 1 tl Dijon mustard
- pepper/salt to taste
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Cut the celeriac in the middle. Clean it and then cut it into XNUMX cm thick slices. From this you cut thin slices again which you then cut into even thinner strips. We call that Julian. Blanch these strips in boiling water for two minutes and drain well in a colander.
- Place all the ingredients for the dressing in a measuring cup and whisk into a dressing. This dressing may be slightly runny.
- Wash the frisee lettuce and let it drain well in a colander.
- Wash the apples, leave the skin on. Cut slices of the whole apples and then thin strips of this too. Place them in a bowl and add the juice of half a lemon. This keeps the strips white.
- Peel the grapefruit and remove the pulp. Chop the celery into thin slices.
- Now add the celery and celeriac to the bowl with the apple strips and add a few tablespoons of dressing. Mix it all up.
- Place the frisee lettuce on the plates and spoon the vegetable mix from the bowl on top. Finish with the grapefruit, walnuts and some extra dressing.
