Recently I was in Utrecht with fellow blogger Jadis for a bite to eat. We visited for a while but were still very hungry and decided to have a snack at the Italian to go eat. Jadis had a nice address and we ate a delicious starter there. Fact is, I completely forgot to take a picture of it and before we knew it it was gone! Now I remembered what we had eaten and I made my version of watermelon with burrata and nuts. A delicious summer dish. Super refreshing and easy to make. salad with watermelon
And this is how you make the watermelon with burrata and nuts:
We start the watermelon with burrata recipe with the watermelon, cut it into slices an inch or two thick. Remove the rind from the watermelon and place it on a plate.
We will caramelize the nuts with olive oil and honey. Take a frying pan and add 3 tablespoons of honey and 4 tablespoons of olive oil. Heat the pan and add the nuts. Fry the nuts over low heat until they are nicely browned. Let them cool on a piece of baking paper.
Watermelon with burrata and nuts
Take the balsamic cream and squeeze some nice lines from the bottle over the watermelon and the plate. Place the burrata on top of the melon and pour a little olive oil over it. Sprinkle with some freshly ground pepper. Finish the plate with the mint and basil leaves, the fresh fig and some nuts. After that it is: Delicious Happen, before you know it your plate is empty!
