Winter chicory salad with goat cheese and nuts

Salads are definitely not just for summer. Of course, in cold weather you don't immediately think of fresh lettuce leaves with fresh dressing. But this winter chicory salad with spicy roquefort dressing will convince you to eat a salad in winter too. I made it with caramelized nuts and grapes and pear. A very healthy salad too! And this is how you make the Winter chicory salad:

-We'll make the caramelized nuts first. In a bowl, mix 2 tablespoons of honey with 1 tablespoon of olive oil and mix well. Then take a frying pan and put the nuts in it, put on a low temperature. Pour the honey over the nuts and make sure they are all well coated. Let them caramelize at a low temperature and then place them on a baking paper to cool. Resist the temptation to put one in your mouth right away, because they are very hot!

– And while the nuts are cooling, we make the dressing, put all ingredients in a mixer or food processor and mix this into a nice smooth dressing. Then put it in the fridge until use.

-Wash the chicory, pears and grapes, then cut and chop them into nice strips and pieces. If you serve per plate, put it on each plate, otherwise you make a nice large bowl.

- Also carefully break the goat cheese in half and place a piece on each plate.

And finally, garnish the plates with the caramelized nuts and the roquefort dressing. A good warm red wine certainly does not look out of place with this dish.

Ingredients:

  • 6 stumps chicory
  • 1 box mixed nuts
  • 2 the kickers
  • 1 zak lamb's lettuce
  • 1 box red seedless grapes
  • 2 fresh goat cheese
  • honey
  • olive oil

For the dressing you will need:

  • 50 gram roquefort cheese
  • 2 tablespoons mayonnaise
  • 2 tablespoons cooking cream
  • 1 teaspoon mustard
  • 1 teaspoon lemon juice
