We add some extra vegetables to this egg salad recipe. I chose chicory because I think it is a very undervalued vegetable. Ingredients:
- 5 eggs - mashed
- 2 stumps chicory - finely sliced
- 10 cubes cheese - in quarters
- 3 el mayonnaise
- 3 el low-fat yogurt
- 10 gram chives
- freshly ground pepper
Herbs and spices
- 1 tl coarse sea salt
- 1 el persillade spice mix

And this is how you make it:
- Boil the eggs until you have hard-boiled eggs. Give them a shock under cold water and peel them. Then put them in a bowl and mash with a fork.
- Cut or chop the chives into small pieces with a knife or kitchen scissors.
- Cut the chicory in half and remove the bottom. The rest you finely chop.
- Cut the cheese cubes into quarters.
- Add everything to the bowl and mix well until you have a nice salad. Season with salt, pepper and the persillade.
