Another version of chicory from the oven. For example, we all know the version of the chicory casserole with ham and cheese and bechamel sauce of course. So in this version chicory with brie and apple from the oven. Brie is very tasty on toast, but you can also use it in a casserole. Brie originates from the region of Brie, the department of Seine-et-Marne and Île-de-France. That is the region around Paris. The most famous brie is "brie de Meaux". Already in 774 Charlemagne tasted this cheese and liked it so much that he had various loads delivered to his castle every year. About 7000 tons of brie are produced every year!
Chicory with brie and apple from the oven
Chicory as used in chicory with Brie en call from the oven, is grown in the dark, which is why it is also white. If you grow it in the light, the leaves will turn green. Chicory is known to be rather bitter. However, growers are now a long way ahead with the taste development of chicory.
Nowadays, chicory is grown all year round, so you will always find it in the supermarket or at the greengrocer's. By the way, did you know that when chicory blooms, it has very beautiful blue flowers?
Serve tip with this one chicory with Brie en call from the oven:
Although you can of course eat this chicory as is, it is a bit “bare”. I would serve a nice puree on the side. If you make it a bit of luxury for yourself, I would definitely opt for a truffle puree. Using truffles is an extremely luxurious version. You can of course use a truffle oil when mashing the potatoes to give it this delicious taste. You already have bottles of truffle oil in the store for around 5 to 6 euros.
The apple we use is the Granny Smith, also called salty or salicornia. This is a type of apple known for its sour taste and firm texture. It is a popular variety of apple for use in baking and dishes because it does not fall apart easily during cooking and its sour taste contrasts well with sweet flavours.
The Granny Smith originates from Australia, where it was bred around 1868 by Maria Ann Smith, who was also called Granny Smith. It is probably a cross between a wild apple and a domesticated variety of apple. The Granny Smith quickly became popular in New Zealand, England and the United States. The Granny Smith is a green apple, which sometimes has a yellow or pink blush. The flesh is white-yellow and juicy.
