After more than four years of blogging, I should know better! I shared a six-second story on Instagram and I was promptly asked several times what the recipe was. I actually didn't intend to write that down at all. I was just craving this salad because I hadn't eaten it in ages. But since I'm not the faintest, I'll write it out quickly. Since the first version was already eaten, I made it again the next day. Because a chicory recipe without photos is of course not an option. We make a chicory salad with smoked chicken and mandarin.

Chicory is a type of vegetable that belongs to the chicory family and is known for its mild, bitter taste. It is often eaten as a snack or as part of a main meal, for example baked with cheese or ham, or as a salad ingredient. Chicory is high in nutrients, including vitamin K, folate, vitamin C and potassium, and is considered a healthy option for those looking for a nutritious and flavorful vegetable. Chicory is readily available and a versatile vegetable that can be added to many different dishes.
If you are a vegetarian, you can easily omit the chicken. For example, replace it with cubes of old cheese, or add some extra apple.

Actually, I've known this salad as long as I've been alive. At least since I was little, because it was regularly on my parents' table. This chicory salad recipe is quite easy to adapt to your own wishes. As I wrote above, you can serve it vegan. Don't like walnuts? Then make it with pecans or even caramelized nuts. The possibilities are endless.

Ingredients:
- 3 stumps of chicory
- 6 celery sticks
- 2 tangerines
- 300 gram smoked chicken
- 75 gram walnuts - finely chopped
For the dressing
- 2 el Jean Baton zingy mayonnaise - (and otherwise regular mayonnaise)
- ½ citroen - the juice
- 1 tl French mustard
- 1 tl mustard
- 2 el olive oil
- peper
- salt
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Cut the bottom of the chicory and then into quarters. Lay them flat on your cutting board and cut into thin strips.
- Cut the celery into very thin slices. Peel the mandarins and remove the white threads.
- Add everything to your bowl and toss together.
- Pour in the dressing and toss again. Sprinkle the walnuts on top and serve.
- Delicious bites!
