This time I fell a bit in love with my tarte tatin! Even before I had cut a piece off or even took a bite of it, I knew: this is a winner! It came out of the oven so beautifully that it was almost a shame to cut it. But of course you have to eat, right?! So I cut this chicory tarte tatin with cranberries and what a taste explosion in your mouth! My husband's first reaction: “wow you really have to make this again”. In any case, I am now sharing the recipe with you so that it cannot be lost and you can enjoy it too!
And this is how you make the Chicory tarte tatin with cranberries:
-Preheat your oven to 210 degrees.
- Cut the endive stems through the middle, you can cut out the most bitter part of the bottom by cutting a small "V".
-Take a quiche mold with a diameter of 24 cm. Put the block of butter in a saucepan and let it melt. When all the bubbles of the water are gone, add the two tablespoons of granulated sugar and let it melt while stirring. When the sugar has melted, pour half of it into the quiche tin and make sure that the entire bottom has a layer.
- Now place the endives with their convex side down in a kind of star shape and pour the other half of the butter/sugar mix over it. Sprinkle the cranberries in the middle where a kind of circle is formed.
-Then we will cover the chicory. Sprinkle some fresh thyme leaves over the chicory and cover with the cheese slices. Place the puff pastry over the slices of cheese as a kind of blanket. Tuck the edges in a bit and then it can go in the oven.
In the oven with the tarte tatin
I first baked this tarte tatin at 10 degrees for 210 minutes, then the dough browned too quickly and I lowered the temperature to 200 degrees. In total it went into the oven for 35 minutes.

Finally, remove it from the oven. If there is any moisture around the cake, drain it very carefully. Then you place a plate on the tarte and with one movement you turn the quiche shape over! Et voilà: a beautiful tarte with delicious melted cheese and perfectly cooked chicory.

I did try it again after I heard from my sister that if you add the sugar, stop stirring! If everything turns brown after about 2 minutes you can use it, and I must say it was delicious and my husband loved it too! SO DO NOT STIR
