The white gold from the ground. And boy how expensive were these first asparagus, I paid almost a euro per asparagus! But they were delicious, so worth every penny. By now I already have quite a lot of asparagus recipes on my website. But there is of course much more that can be done. The most basic version with a bit of ham and an egg is of course great. But now we are going to make white asparagus in béchamel sauce from the oven. Another way of preparing and very tasty. A delicious asparagus recipe.
The sauce is of course a classic and also very simple to make. The good thing is that you can give it your own taste. I did that with freshly ground nutmeg and spicy gruyere cheese.
White asparagus in bechamel sauce
Asparagus is a real seasonal vegetable that I look forward to every year. The asparagus season only lasts a few months, so I want to enjoy them as much as possible when they're fresh out of the ground. I have a kind of “FOMO” when it comes to asparagus… ( Fear Of Missing Out).
I don't want to miss any chance to eat this delicious vegetable! And at the end of the season I can say that we have had asparagus on the menu very often here at home!
If you are looking for a simple and tasty asparagus recipe, this is a must. You don't need any special cooking skills to prepare this dish. All you have to do is peel the asparagus, cook it and serve it with a homemade béchamel sauce.
This sauce is one of the basic recipes of French cuisine and very easy to make. You only need butter, flour, milk and spices. The result is a creamy and smooth sauce that goes perfectly with the asparagus.

White asparagus in bechamel sauce

Ingredients:
- 12 asparagus
- 8 slices of shoulder ham
- 40 gram butter
- 40 gram flower
- 500 ml milk
- 150 ml White wine
- 3 fresh parsley sprigs
- 200 gram gruyere cheese grated
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Peel the asparagus and cut off the ends. Keep the peels and butts for an asparagus soup in a plastic bag in the freezer.
- Preheat your oven to 200 degrees.
- Roll two slices of ham around 3 asparagus and place these asparagus packets in the cast iron pan.
- Take a saucepan and melt the butter in it first, then add the flour and fry briefly. Slowly add the milk while stirring.
- Season the sauce with pepper and freshly ground nutmeg. Add the grated gruyere and stir until the sauce has a nice lumpy consistency.
- Pour the sauce over the asparagus packets and add the white wine. Cover the pan and then bake in the oven for 35 minutes.
- Remove the lid from the pan and leave it in the oven for another 5 to 10 minutes so that the cheese gets a nice colour.
- Sprinkle some chopped parsley on top and some pepper and serve immediately.
